CMC (food grade) has the functions of thickening, emulsification, forming, water retention, and stability. Adding CMC to food, can reduce the production cost of food, improve food taste, and also can extend the shelf life of food, which is the ideal food additive in the food industry. It can be widely used in a variety of solid and liquid beverages, canned, candy, pastries, meat products, biscuits, instant noodles, roll noodles, instant boiled food, frozen flavor snack food and soy milk, yogurt, peanut milk, fruit tea, juice and other food production.

. Function and Properties:

  • Thickening Agent: CMC is widely used as a thickening agent in food products, such as sauces, dressings, and ice cream. It imparts viscosity and improves texture.
  • Stabilizer: It acts as a stabilizer in certain food and beverage applications, preventing ingredient separation.
  • Binding Agent: CMC is used in pharmaceuticals to bind tablets and improve their disintegration properties.
  • Viscosity Modifier: In cosmetics and personal care products, it is employed to adjust the viscosity of creams, lotions, and various formulations.

2. Solubility:

  • CMC is soluble in water and forms a transparent gel-like solution. The degree of substitution (DS), which indicates the number of carboxymethyl groups per glucose unit in cellulose, influences its solubility and properties.

3. Food Grade CMC:

  • CMC used in the food industry is typically food-grade and considered safe for consumption. It is approved by regulatory agencies as a food additive.

4. Pharmaceutical Grade CMC:

  • Pharmaceutical-grade CMC is used in the pharmaceutical industry, primarily as a binder in tablet formulations.

5. Industrial Applications:

  • Besides food and pharmaceuticals, CMC has industrial applications, including use in detergents, textiles, paper manufacturing, and oil drilling.

6. Rheology Modifier:

  • In addition to its thickening properties, CMC is a rheology modifier, meaning it can influence the flow behavior of liquids.

7. Safety Considerations:

  • CMC is generally considered safe for its intended uses. However, it’s important to follow regulatory guidelines and adhere to recommended usage levels.

8. Sustainability:

  • Cellulose, the base material for CMC, is derived from plant sources, making CMC a renewable and biodegradable material.
